Rice Balls!

We are making Rice Balls. You can have them sweet, or we have them with a hot sauce on occasion.   Very versatile – mix some veggies in your rice which is what I did yesterday. Sautee some finely chopped onion, a little tomato, chopped courgettes, a scant spoonful of herbs of choice, and mix with the rice. Or make yellow rice with chopped nuts and sauce up with your choice of sauce.

So, this is how the Russian Kitchen say you have to prepare these and I’ve shortened it.

Ingredients:

2 cups of cooked and cooled rice
2 eggs
1 teaspoon of sugar
1 cup of raisins
½ cup of breadcrumbs or flour
2 tablespoons of butter

1 liter of berry jelly or other type of jelly or sauce

Cooking:

Add everything to the rice and mix.
Form cutlets or balls, roll them in the flour or breadcrumbs, and fry in the butter.
When ready, plate up, decorate and  serve with your sauce of choice
